Frankies !!



Ingredients :
Dough:
2 cups of All purpose flour
salt to taste
oil
water as needed

Filling:
4 boiled potatoes
1/2 tsp green chili paste
salt to taste
chopped jalapeno
chopped onion
Mango Powder

Directions:
1)Knead dough using ingredients mentioned above and keep it aside for 15 minutes.
2)Meanwhile mash the boiled potatoes add green chili paste and salt and make small patties out of it and shallow fry it.
3)Roll small roti's out of the dough and cook it on one side using little bit butter.
4)Flip the Roti and then on the cooked side apply mango powder , add chopped onion and jalapeno and keep 2-3 patties(as required) and roll it(make sure the side facing the flame is cooked too).
Serve with tomato ketchup.





Daal Dhokli!!


Ingredients :
Daal(Section A)
2 cups of Toor Daal
50 grams of peanuts
1/4 tsp of green chilli paste
2 pinches of turmeric powder
1/2 tsp of red chili powder
1/2 tsp of mustard and cumin seeds
1 tsp of Corrainder-cumin powder
water (as needed)
salt and sugar to taste
1/2 tsp lemon juice
1/2 tsp of chopped cilantro (to granish)

Dhokli(Section B)
1 -1/2 cup of wheat flour
pinch of turmeric powder
1/4 red chili powder
salt to taste

Directions:
1)Knead dough for the Dhokli using ingredients mentioned in Section B and cover it.
2)Pressure cook (4-5 whistles) toor daal and peanuts.
3)Once cooked properly pour it in a large pot and add water ,all ingredients mentioned in Section A.
4)In a small pan take some oil add mustard seeds,cumin seeds,red chili powder,turmeric powder,Corrainder-cumin powder and pour it in the pot(step 3)
5)Mix it well add fresh cilantro and heat it on low gas.
6)Now roll out big thin roti's out of the dough(step 1) and but it in diamond shape.
7)Put the cut dhokli's one by one in the pot and let it cook.
8)Stir occasionally ,once the dhokli starts sticking at the bottom of the pot(tip -this shows that the daal dhokli is ready to eat) remove it from flame.
9)Serve hot with lemon and ghee.

Palak Paneer !!

Ingredients :
1 bunch of Palak (spinach)
200 grams of Paneer
1/2 tsp green chili paste
salt to taste
pinch of turmeric powder
Oil
1/4 tsp of cumin seeds
1/4 cup of water
1/4 cup of green peas

Directions :
1)Cook spinach leaves in a pressure cooker (1 whistle) and grind it.
2)In a pan take 2 tsp oil add cumin seeds once it sputters add spinach paste ,1/4 cup of water and let it cook for 2 minutes.
3)Add cubed(slightly fried) paneer and green peas into the gravy and add salt,turmeric powder and cook for another 2-3 minutes.
Serve with Roti/Naan.

Poha Chiwda !!


Ingredients :
Section A

50 grams peanuts
50 grams cashew nuts

30 grams of dalia
30 grams of green Raisin
4-5 green chillies chopped
few curry leaves

Section B :
500 grams of thin poha


Directions :
1) Deep fry all the mentioned in Section A and k
eep it aside.

2) Meanwhile take a non stick pan and roast the Poha till it becomes crispy and crunchy(takes 15-20 minutes according to the quantity)
3)In a Big pan take some oil and add mustard seeds ,turmeric powder,red chili powder and mix well.
4)Once the chiwda looks yellow add the the fried ingredients in step 1 ,salt and sugar to taste and mix well.

Mango Delight!!


Ingredients:
1 can of Mango pulp
1/2 can of Whipped cream
3/4 can of the sweet condensed milk.

Directions :
Mix all the ingredients mentioned above and refrigerate for few hours before serving.




Green Chutney!!



Ingredients:
1/2 bunch of Cilantro
6-8 Mint leaves
1/2 tsp garlic chopped
salt and sugar to taste
1/4 tsp of chopped green chili
1 tsp of Thin Sev

Directions :
Mix everything in blender and make a smooth paste out of it.

Bhel!!


Ingredients:
200 grams puffed rice (roasted)
50 Grams Punjabi Mix Chiwda(optional)
Green Chutney
Mithi(sweet chutney)
chopped onion
chopped tomato
chopped green mango
chopped boiled potato
chat masala (according to taste)
thin sev (to garnish)

Puffed Rice(Roasted):
In a pan take 1/2 tsp of oil add mustard seed,1/2 tsp of red chilli + turmeric powder + garam masala(mix all 3) and add the puffed rice.Mix it well so it gets nice color all over.
Now add salt and sugar(to taste).Once the puffed rice are crunchy enough remove it from flame.

Chutney's :
Recipe for Green Chutney
Mithi Chutney:
In a pressure cooker mix 1 cup of pitted Dates,1/4 cup of jaggery and 2 tsp of tamarind paste and pressure cook till 1 whistle.
Once cold make a smooth paste out of it(concentrated).
Mix water and use as required.
Direction :
1)Add all the ingredients as required and mix it well.
2)Take a deep bowl put some of the bhel made using step 1 and garnish with little bit of onions and thin sev.

Kala Sheera !!

Ingredients :

2 cups of Wheat flour
1/2 cup of ghee
2 cups of water(Approx)
1 cup of jaggery(Approx)
2 tsp of sliced almonds ,green raisin and Cashew nuts

Directions :
1)In a pot mix the water and jaggery and bring it to boil.

2)In a non-stick pan heat ghee(till it melts) ,add the flour and saute it till the color of the flour turns dark brown and there is nice aroma from it.

3)Now add the water(from step 1) and continuously mix it so there are no lumps formed.

4)After few minutes the ghee starts leaving the sheera(this is the stage were we know the sheera is cooked properly).

5)Add the sliced dry fruits and mix it well.

Serve hot.
