Manchurian With Gravy !!

Ingredients : For Manchurian :

1/4 pound of Cabbage
2-3 Carrot
1/4 pound of Cauliflower
3-6 tsp of All purpose flour
8-10 tsp Corn starch
Pepper ,salt and green chili paste according to taste

For Gravy :
4-5 tsp of corn starch
1 capsicum
1/2 onion (optional)
Finely chopped green chili , ginger and garlic
Scallions
Soyra sauce
Salt to taste

Directions :
1)Grate cabbage,carrot and cauliflower and then mix the mentioned ingredients ,make balls out of it and deep fry it until brown.




















2)In another pan take around 2-3 tsp oil and saute chopped green chili,ginger and garlic,scallions,bell pepper.
3)In a bowl mix water and corn starch such that there are no lumps left.
4)Pour the mixture made in step 3 in the pan(step 2) and let it boil.
5)Add soya sauce,salt and mix well.
6)Once the consistency of the gravy is good and thick enough add the Manchurian to it .

Serves 3-4

Hakka Noodles!!

Ingredients :

2 cup mixture of following vegetables


String Beans
Carrot
Bell pepper
Cabbage

Approx 2 tsp of following things :
Finely chopped Green chillies ,Ginger and Garlic

Chopped Scallion


2 Packets of uncooked noodles.

Directions :
1)In a big pan bring water to boil and add the uncooked noodles + 1 tsp of oil and cook as directed(Behind the packet).


2) In another pan take some oil and saute all the cut vegetables after adding chopped green chili,ginger,garlic and scallions to oil.

3) Once cooked add the noodles ,soya sauce and salt to taste & mix well.

Muli ke Parathe !!

Ingredients :

1/2 cup chopped Muli (Daikon radish)
1 tsp Spices (Turmeric powder,red chili powder ,corrainder powder and Garam masala)
Salt to taste
1-1/2 tsp Yogurt
Salt to taste
1/4 tsp Green chilli paste
1 - 1/2 cup of wheat flour.
Oil

Directions :
1)Take Grated Muli and add all the metioned ingredients and Knead the dough.
2)Roll out small round Chapatis out of it and cook it on non-stick Tawa using ghee.
3)Apply ghee while serving.

Fruits and Nuts Salad

Ingredients :
3/4 cup Romanian lettuce
1/4 cup grapes
1/2 cup mixture of peanuts,cashew, chick pease and kidney beans (soaked and cooked)
thinly sliced Cucumber
2-3 tsp grated carrot
1 Banana (optional)
Few pieces of cut pineapple
Salt and Pepper to taste

Directions :

1)Microwave the peanuts and cashew for around a minute(to kind of roast it).
2)Chop the lettuce and wash it ,put it a bowl and mix all the other ingredients mentioned and mix it well.
3)Refrigerate it for around 10-20 minutes and server it :).

Sevaiya Upma



Ingredients :

150 grams of Roasted Vermicelli
2 tsp Urad Daal
2 tsp Peanuts
1 tsp Chana Daal
1 tsp Cashew Nuts
1/4 tsp mustard seeds
1-2 tsp Oil
2-3 tsp of green pease + cut carrots
1/4 cup finely chopped onion
1/4 tsp green chilli paste
1-1/2 cup of water
2-3 curry leaves
Salt to taste

Directions :
1) Take oil in a pan.Once warm add mustard seeds and wait for it to sputter add cashews nuts,peanuts,chana daal and urad daal and saute it for 1 minute.

2)Add finally chopped onion to it and saute it such that it remains translucent (not much brown).

3)Add Green pease and chopped carrot and saute it for few minutes.Add water to it and bring it to boil.

4)Then add roasted Vermicelli to it and cover it till all the water Evaporates.

5)Check if Vermicelli is cooked properly if not add more water and cover it.

6)Once cooked remove it from flame and let it be covered.

Strawberry whipped ice-cream !!!



Ingredients :

  • 4 cups fresh strawberries
  • 1 can (300 ml) sweetened condensed milk
  • 1/4 cup lemon juice(optional)
  • 2-1/4 cups whipped cream
  • 8 Oreo( finely crushed)
  • 1 tbsp butter melted
Directions :

1) In a Bowl take 2 cups of crushed strawberries ,mix condensed milk ,lemon juice(optional) and 1-1/4 of the whipped cream.

2)Line a loaf pan with Foil, with ends of foil extending over sides of pan (as shown in the picture).

3) Crush around 8 cookies into a different bowl and add margarine/butter to it(this is to hold the cookies together when you invert the dessert on a dish while serving)

4)Pour the mixture prepared in step 1 into the pan and then make a layer of cookies on top of it and press gently using the extended foils and then Freeze it for 6-7 hours.

5)Invert the dessert onto serving plate when ready to serve; remove pan and foil. Spread remaining 1 cup of whipped cream and sides of dessert. Slice remaining 2 cups strawberries; arrange over dessert. Store leftovers in freezer.

Rice Chakli!!!


Ingredients :

2 cup Rice Flour
1/2 cup Sour cream
1/2 tsp sesame seeds
1/2 tsp green chili paste
1/2 tsp ginger/garlic paste
salt to taste

Directions :

1)Mix all the ingredients and make dough out of it,use some water if needed.

2)Put it in chakli mold and make chakli's out of it.

3)Deep fry it until its light brown.

Ready to eat.

Handvo !!

Ingredients :

3 cups of urad dal (split )
1 cup rice
1 tsp green chili paste
2 potatoes
salt to taste
few methi seeds
2-3 tsp yogurt
a
oil

While making handvo :

oil

sesame seeds
mustard seeds
batter using above ingredients



Directions :

1)Soak the dal and rice in afternoon if you are planning to make the handvo as next day breakfast or lunch.

2)Same night you need to grind the dal a
nd rice into smooth batter.

3)Add 1-2 tsp hot oil,1/4 cup hot water,c
urd and methi seeds to it and let it ferment whole night in a warm place (best place I think is oven).

4)Next morning add grates potatoes,green chilli and salt to the batter and mix well.


5)Take a non-stick pan add 1 tsp oil to it ,add mustard and sesame seeds and let it splutter.

Add around 1 soup pouring spoon of batter (just like panc
ake) and let it cook on one side until it turns bit brown.

6)Once done flip over the handvo and cover it for few minutes.
Flip once or twice to get nice color and crispiness.


Serve it with sauce,chutney or curd.

Vade(to eat during fast)



Ingredients :

Batter :
1 cup Singoda flour
1/4 cup Rajigra Flour
1/4 tsp green chilli paste
salt to taste
1/4 tsp Aamchur powder
1/4 tsp black pepper powder
water as needed

Oil to fry
2-3 Potatoes and 1-2 Banana's

Directions :

1) Mix all the things mentioned in the batter section (please note the consistency should be thick enough to cover the potatoes)

2)Cut potatoes into thin slices and dip into the batter and "Deep fry" it.

Server it with curd and sugar(mixed)

Besan ke laddoo!!

Ingredients :

1 cup ghee
2 cup's of besan flour
1 cup sugar
1 tsp milk

Directions :

1) In a non-stick pan take ghee and warm it then add the flour to it and saute it till you smell nice aroma from it the color of the besan flour changes from yellow to light brown.

2)Then add 1 tsp of milk and mix it well (note you should feel some crispness when you kind of hold this mixture in your hand).

3)Add sugar to it and mix it well again,remove it from flame.

Let it cool for some time.


Please note if you feel the proportion of ghee is more and you cannot make ladoo's just freeze the mixture for 15-20 minutes and form ladoo's as shown above.

Gatte ki sabji!!!

Ingredients :

For dough :
2 cups besan ka aata
salt to taste
1/4 tsp turmeric powder
1/2 tsp red chilli powder
1/4 tsp garam masala
water to knead dough

For Gravy :
3-4 tsp oil
3/4 tsp garlic paste
approx 3 cups of yogurt
2-3 tsp besan ka aata
cumin seeds
water as needed
1/4 turmeric powder
1/4 red chili powder
salt to taste

Directions :
1)First of all knead dough using the above mentioned ingredients.Please note the dough should not be very soft it should be hard enough to make rolls and cut it as shown in the picture below.

2)In a pot pour some water and bring it to boil and put the cut gatte's into it.Keep boiling it until it starts sticking to bottom of the pot. 3)Then drain it in a vessel as shown above.

4)In a pan take some oil add cumin seeds and after it sputters add garlic paste and saute it. Add the mixture of yogurt and besan and add water to it.
Let it boil then add turmeric powder,red chilli powder and salt. Once it has the thickness of a gravy add gattes to it and garnish with cilantro and serve with roti.

Gulab Jamun - in Jiffy !!!

Quickest way to make Gulab Jamun :)

Ingredients :

3 cup sugar
300 ml water
1 & 1/2 cup bisquick pan cake mix
ricotta cheese (to make dough)
pinch of saffron

pinch of Cardamon powder
Oil for frying.


Directions :

1)In a pot mix Sugar and water and boil it till it becomes thick sugar syrup,once done add saffron and cardamom to it.

2)In a bowl take 1 1/2 cup of pancake mix and mix ricotta cheese (till u make a nice dough out of it).

3)Make small balls out of it and deep fry it in oil,make sure when you put the jamun's it should not rise quickly if it does slow down the heat so that the oil becomes little bit cold.Also when you fry the jamun's take a spoon and move it in circular motion in the oil(so that it cooks and gets good color all over).

4) Once jamun's are fried and has good color soak it in sugar syrup(warm) for few minutes and then remove it in a bowl. Then once the syrup gets cold enough add it to the jamuns :).


Ready to serve.

Paneer mutter Mahanwala!!


Ingredients :


300 grams paneer
1tsp red chili powder
1tsp coriander powder
1/4 tsp turmeric powder
1/2 tsp kasori methi (crushed)
1/2 tsp garam masala
1/2 cup green peas
1 cup milk
1/4 cup of heavy whipping cream
2 tsp tomato ketchup
5 tsp tomato puree
3 tsp onion chopped
Butter for tempering
water according to measurement given below.
1/4 tsp cumin seeds

Directions:

  • In an bowl add kasori methi,red chili powder,coriander powder,garam masala,turmeric powder,tomato ketchup,tomato puree and heavy whipping cream and 1/2 cup of water.Allow it to mix for around 30 mintues.
  • Side by side you can deep fry paneer(1 inch cubes) until light brown.
  • In a pan take some butter add cumin seeds to it,once it sputter's add finely chopped onion and saute it till its brown and has nice aroma.
  • Then add the mixture made in step 1 ,cover it and let it simmer for 3-4 minutes.Stir occasionally.
  • Once you see the butter leaving the gravy,add milk little by little(mix when you pour milk in small quantities-so that it does not get affected due to acidic things in the gravy)
  • Finally add paneer and green peas to it & cover it and let it simmer for another 3 minutes.
You can garnish it with corrainder leaves.
Serve it with Naan or puri.

Mango Matho!!!


Here is a quick recipe to make mango matho,its easy to make.

Ingredients :

8 cups of yogurt
1 can of Mango pulp
1/2 cup sugar (adjust according to taste)
pinch of saffron
pinch of cardamom powder

Directions :

  • Take a muslin cloth ,pour the yogurt into it and tie and hang it in such a way that all the water drips out of the yogurt. (Take 3-4 hours)
  • Mix pulp ,yogurt(after draining water) ,cardamom and finally saffron.
Chill it in the refrigerator for few hours and eat it with puri.

Peanut Ladoooo's !!!!


Ingredients:

1/2 cup jaggery
3-4 tsp ghee
1 cup crushed peanuts.

Directions :

Take some ghee in a pan...add jaggery and heat it till it melts.
Once the jaggery melts add crushed peanuts and remove it from the flame.
Make small balls out of it and its ready to eat:)

Taco Salad!!!!

Ingredients :
For Beans ::
1 Can of baked beans
1/2 packet of taco seasoning.
2 tsp cheese(spreadable)
3/4 tsp sour cream
2-3 tsp of salsa(medium /hot)


For topping :
1 cup chopped lettuce
1/2 cup capsicum + tomato
1/4 cup grates carrot
1-2tsp onion
1/4 cup Taco cheese

Directions :

1) Mix Beans,taco seasoning ,sour cream,cheese and salsa in a pan and mix it well.
After cooking for 4-5 minutes turn the grill/flame off and let it cool.




2)Take a flat bowl and spread a thick layer of the cooked beans and then make layer of the cut vegetables i.e Capsicum,tomato,onion and then lettuce.
Sprinkle shredded cheese for more flavor :).

Serves 2-3 people.
Eat with tortilla chips.

Banana Dazzler


Here is how you can make banana dazzler in a simple way...which has become favorite desert of my hubby :)

Ingredients :

Serves 2
1 banana
50 gm grapes
50 gm strawberry
few cashew nuts and raisins
1 -2 pieces of dried fig (optional)
around 3-4 scoops of Vanilla ice-cream
whipped cream
chocolate syrup
cherry



Directions :

1)Take a long glass(depends on how many layers of ice-cream you want : ) ) ,drop a scoop of ice-cream as first layer in the glass then add grapes,again layer of ice-cream then strawberry(missing in my dazzler today),ice-cream then banana with cashew nuts ,raisins and fig..then last layer of ice-cream.

2)Once the glass if full with layers...put some whipped cream,chocolate syrup and top it up with a cherry.

Tava Pulav

This is a quick recipe of making pulav using left over bhaji(of Pav Bhaji).

Ingredients:

2 cups left over bhaji(made for pav bhaji)
2 cups of cooked rice
1 whole chopped onion(cut vertically)
50 grams Green peas
1 tsp mustard seeds
pinch of Asafoetida
3tsp oil

Directions:

1) Pour some oil in a pan and once hot add mustard seeds and add asafoetida.
Then add onion & Green peas saute it till its the onion turns brown .




2)Add bhaji to above mixture and mix it well.




3)Then after 3-5 minutes add the cooked rice in it and again mix it thoroughly.

Garnish it with Coriander/Cilantro leaves and tomato and serve hot.

Kellogg's Corn Flakes and Rice Krispies Chiwda

Ingredients:

1/2 box Rice Krispies
1/2 box Corn Flakes
150 grams peanuts
100 grams raisin
75 grams Cashew nuts
7-8 chopped chillies(optional)
7-8 curry leaves

For Tempering:
1tsp or less sesame seeds
1 tsp or less mustard seeds
1/2 tsp turmeric powder
1/2tsp chilli powder
1/2 tsp garam masala
1/2 tsp dhaniya powder(corrainder powder)



Directions :
Fry peanuts,cashew nuts,raisin,chillies and curry leaves.
In a small pan take some oil add sesame seeds,mustard seeds once it starts popping at turmeric powder,chilli powder ,dhaniya powder and garam masala to it.

Mix this with corn flakes and rice kripies mixture in a big pan and mix it well on top of a grill/frame range.

Its Ready to eat :)
